Tips for Making the Best Fried Rice

Always add a little Shaoxing wine or rice wine when you beat the eggs. The eggs will be fragrant and flavorful with a whisk topped with a little rice wine.
If your rice is lumpy, add a few drops of water or you can use Shaoxing wine. The steam from the water will remove lumps of rice.
If you are making fresh rice for fried rice, reduce the water you normally use by 15-20%. However, old rice or leftover rice from last night or leftover rice this morning are the best choices for making fried rice. But this is not a requirement, because we can use freshly cooked rice too.
If in doubt, add a splash of fish sauce, this will build up the flavor and make you more excited about frying the rice.

Supreme Soy Sauce Fried Rice Recipe Instructions
Before we make fried rice, first thing let’s see how to make supreme soy sauce.
Add fish sauce, soy sauce, light soy sauce, sugar, shaoxing wine, oil, oyster sauce, put all in a saucepan over medium heat. Stir to dissolve the sugar.
When the sauce comes to a boil, turn off the heat and you’re done, it’s ready to be used for fried rice, or you can also chill it completely before storing it in an airtight container. The result of this sauce is only enough to make fried rice. If you want to add it, please double it.
Now let’s move on to the fried rice.
For beaten eggs, add a teaspoon of shaoxing wine and add a pinch of salt. Heat a tablespoon of oil in a skillet over high heat. Scramble the eggs quickly, and transfer to a plate, set aside!

- 2 teaspoons fish sauce

- 1 teaspoon oyster sauce
- for fried rice: 3 eggs, 1 teaspoon Shaoxing wine, 3 tablespoons oil, Salt, 6 cups cooked rice, 3 scallions
Make the soy sauce mixture, put all the sauce ingredients in a saucepan, place the saucepan over medium heat. Stir to dissolve the sugar, when the sauce boils, turn off the heat and you’re done. This soy sauce can already be used for fried rice. You can also refrigerate it until it is really cold. Then store it in an airtight container for future use. This amount of sauce is only appropriate for this recipe, if you want more you can double it by doubling the ingredients.
